Spinach Quiche
Crust
1 1/3 cup 85% whole wheat flour
1/3 cup oil
1/2 teaspoon salt
2 Tablespoons cold water
Spinach filling
Ingredients
250 gm 3% cottage cheese
250 gm 5% white cheese
2 cups frozen, defrosted, strained if all water spinach
1/4 cup shredded Parmesan cheese
1 teaspoon oreganoOptional
1 tablespoon hydrated sultans (golden raisins)
Directions
Mix flour and salt in a large bowl
Add the oil and mix until crumbly
Add the water slowly and mix dough into a ball
Press into pan
Note: you can add 1T sugar for a sweet pie crust.
You can also pre-bake the crust for lemon pie or a no-bake cheese-cake
Preheat oven to 180c 350 f
Mix the filling with a whisk and pour into prepared unbaked crust
Bake until set around 25 minutes
