Spinach Quinoa Burger

 

Ingredients

2 Cups sauteed or frozen spinach defrosted and squeezed

1 onion sauteed in coconut oil (nuetral oil) spray

1 carrot shredded sauteed with the onion

1/4 cup Gluten free breadcrumbs

1 egg

4 Cups cooked Quinoa

Himalyean Sea salt

Pepper/ red pepper flakes

Simply Organic Herb de provence seasoning

 

 

Preparation

Preheat the over to 200C or 400F

In a food processor, add the sauteed vegetables to the bowl and pulse twice. Season  with a little salt and pepper. Then add the Quinoa and 1 Tablespoon herb seasoning  and pulse again once. Then add the egg and breadcrumbs and pulse until combined gently. Adjust seasoning to taste. Line a baking sheet with baking paper and oil well with spray or by hand. Then form the patties and bake for 8 minutes, carely flip the patties spray again and bake for another 10-15 minutes until set. Allow to cool fully before moving. If freezing freeze on the sheet before moving the patties to a freezer safe bag.
