Healthy Happy Morning Muffins
We all know breakfast is the most important meal of the day!
It is the stabilizing force for your blood sugar after the long over night fast. A perfect breakfast has fiber, protein and whole grains for optimal energy and without the fall late on. Add fruit and vegetables and you’re a powerful force for good health and weight maintenance.
Before my muffins recipe, here are some more great breakfast ideas:
1. Oatmeal made with almond milk and chopped nuts (fruit optional)
2. Eggs with whole grain toast, tomato sauce and chopped salad
3. Scrambled eggs with goat cheese and smoked salmon and spinach
4. Tuna and cheese tortilla toast with a chopped salad
These muffinns make a full serving of fruit and vegetables, protein and whole grain in each one! They are perfect with cream cheese. Yum.
Makes about 24 muffins
Ingredients
1/4 Coconut or canola oil
2 dates pitted and chopped
1 firm zucchini grated
100 gm soaked raisins chopped
2 large carrots grated
1 egg
2 tsp baking soda
2 C whole wheat flour
1.5 C apple sauce (unsweetened)
1 tart apple grated
1/4 tsp ground ginger
1/2 tsp nutmeg
1/4 tsp ground cloves
1 tsp cinnamon
1 tsp vanilla
10 Walnut halves chopped
Mix wet ingredients together, sift in dry ingredients and then blend in toppings and grated mix.
Bake in 350 degree oven till a tester comes out clean.
You can sprinkle a tsp of sugar on top.
